Apple Pie Spiced Granola

I had a stressful day of wedding planning, and needed to bake! There is nothing more relaxing to me - then putting on a good show/or some music, and experimenting in the kitchen. Here is my super simple granola recipe with a twist!


2 c. Rolled oats

1/2 c. Nuts (walnuts)

1/2 c. Chia seeds

1/3 c. Maple syrup

1/4 c. Coconut oil (melted)

1 tsp. Vanilla

1 1/2 tsp. Apple Pie Spice (or cinnamon or pumpkin pie spice)

Heavy pinch of salt


  1. Preheat your oven to 350F, and line a baking sheet with parchment paper.

  2. Add oats, nuts, chia seeds, apple pie spice, and a large pinch of salt to a bowl.

  3. Add maple syrup, melted coconut oil, and vanilla into the bowl, and mix well.

  4. Spread granola on the baking sheet, and pop it in the oven for 20-25 minutes, or until it looks slightly browned.

  5. Pull it out of the oven, and allow the granola to cool for 30 minutes.

  6. Mix in other additions (like dried apple slices or coconut chips) and store in an air-tight container (for up to a month). I like to refrigerate it to keep it extra fresh!
